Our Nordic pops are handmade daily from vitamin-packed super berries like sea buckthorn, cloudberry, gooseberry and blueberry. Inspired by the Nordic kitchen we create fruity summer treats, always based on our own original recipes. Whether refreshing sorbet or creamy gelato, we work only with quality ingredients and stay away from artificial stabilizers and preservatives. Looking for vegan or dairy-free options? Our base recipe is simple: berries and fruit. Depending on the pop, we add selected ingredients: cream or dairy, a layer of bitter dark chocolate, a dusting of home-baked Makroner or chunks of yummy caramelized walnuts.
Our berries are non-GMO, where possible organic, and some, like cloudberry and sea buckthorn, are plucked by hand in the forests of Sweden and Finland.
Nordic berries are undisputed superfoods and they are as nutritious frozen as fresh. We buy our berries seasonally at the local market or flash-frozen, a process that locks in nutrients, flavour and freshness.
We are husband and wife team Jacob (a Dane) and Vanessa, and we are on a simple mission. To share the vibrant flavors of the Nordic kitchen with a wider audience.
In 2017 we launched Nordikos in Madrid, our adopted hometown, handcrafting our gourmet pops from traditional Scandinavian berries and fruit. Our Nordic pops brought a first taste of the Nordic kitchen to the Spanish capital, where berries like cloudberry, sea buckthorn and gooseberry are virtually unknown. We were thrilled to see our Nordikos pops regularly make the city’s list of best ice creams, delighting foodies and regular customers alike.
But we are now embarking on a new adventure, a result of personal and professional changes. As a family we are going to be spending a lot more time in Denmark (Jacob’s home country) and, of course, we want to take Nordikos with us. That is why we are moving Nordikos from Madrid to Bornholm starting in Summer 2019!
