from BORNHOLM with love and berries
Our Nordic pops are handmade in Aakirkeby on the island of Bornholm. We use vitamin-packed super berries like sea buckthorn, cloudberry, gooseberry and blueberry to create fruity summer treats, always using our own recipes. Whether refreshing sorbet or creamy gelato, we work only with quality ingredients and stay away from artificial stabilisers and preservatives. Looking for vegan or dairy-free options? We have those too. Fancy something more decadent? Indulge your sweet tooth with our homemade Madagascar Vanilla pop dipped in dark chocolate or try our Hazelnut pop with roasted hazelnuts. Værsgo!
Our base recipe is simple: berries and fruit. Depending on the pop, we add selected ingredients: cream or dairy, a layer of bitter dark chocolate, a dusting of home-baked Makroner or chunks of yummy caramelized walnuts.
Our berries are non-GMO, where possible organic, and some, like cloudberry and sea buckthorn, are plucked by hand in the forests of Sweden and Finland.
We are husband and wife team Jacob (a Dane) and Vanessa, and we are on a simple mission. To share the vibrant flavors of the Nordic kitchen with a wider audience.
In 2017 we launched Nordikos in Madrid, our adopted hometown, handcrafting our gourmet pops from traditional Scandinavian berries. Our berry pops brought a first taste of Nordic kitchen to the Spanish capital, with flavors like cloudberry, sea buckthorn and gooseberry. We were thrilled to see Nordikos make the city’s list of best ice creams two years in a row, delighting foodies and regular customers alike.
But we are now embarking on a new adventure, a result of personal and professional changes. As a family we are going to spend a lot more time in Denmark (Jacob’s home country) and, of course, we want to take Nordikos with us. That is why we are moving Nordikos from Madrid to Bornholm starting in Summer 2019!
